🥔 Crispy Hasselbackspotatis 📷 by @missmarzipancom 🚨🚨Recipe: For 800 g of potatoes, use around 1-2 tbsp olive oil combined with around 25 g dairy-free buttery spread (melted), around a tsp of coarse sea salt flakes plus an optional tbsp of fine bread crumbs (can be gf, if preferred). Herbs, garlic salt, vegan cheese and more can all be added if desired.
Wash and dry the potatoes.
Slice slits into each potato, about 3/4 of the way through so that the bottom remains in tact. Space the slits around 2 mm apart.
Pop the potatoes into a greased ovenproof tray or dish.
Brush the potatoes with half the melted butter and oil mix.
Season generously with salt and pepper.
In an oven preheated to 200°C (fan) roast the potatoes for 30 minutes, then remove the pan from the oven and brush over the remaining butter and oil so that it enters the gaps between the slices.
Bake for a further 15-20 minutes or until the potatoes are golden, crispy on the edges and cooked through.

For the pesto:⠀
In a food processor add 2tbsp of cashews, handful of basil leaves, handful of chopped kale, 1 crushed garlic clove, 2 tbsp of nutritional yeast, the juice of 1/2 lemon, salt & pepper to taste and a glug of olive oil, Blitz until creamy. Spread a thick layer of pesto on each slice, add some vegan cheese, some avocado slices and some sauerkraut (if you don’t like it swap for pickle) Toast the sandwich in a griddle pan until crispy and golden brown around the edges. Enjoy!

4 slices of toast / bread of choice
100 ml of tomato passata
125 g vegan grated cheese (or vegan mozzarella)
pizza spice optional
olive oil to drizzle
fresh basil optional
Preheat the oven to 180°C circulating heat.
Toast the bread slices in a toaster briefly (about 1-2 minutes).
Meanwhile, to make the tomato sauce, stir tomato passata with salt, pepper and pizza spice to taste.
Slice cherry tomatoes.
Place the toasted bread slices on a baking sheet lined with baking paper. Add a generous spoonful of tomato sauce and spread with the back of the spoon to the corners.
Top with sliced tomatoes and grated vegan cheese or vegan mozzarella (or other toppings of choice). Drizzle with a little bit of olive oil, if you like.
Bake your pizza toasts in a preheated oven for about 10 minutes until the cheese has melted.
Remove from the oven and serve them garnished with basil (or other fresh herbs). Enjoy!

What most people don't realize is that life is MEANT to be fun and feel good. We're not meant to struggle and suffer
The majority of the suffering is self imposed through our own thoughts and feelings. We have a choice to feel good because we can choose our thoughts
Of course there are things that are beyond our control, like chemical imbalances, war, poverty, moronic orange presidents...bad shit happens daily
But our job as humans on this giant spinning rock is to be good to one another as much as possible
Practice kindness, gratitude, positivity and service
If you suffer from depression + anxiety it can be really hard to do this but when you're focused on helping someone else...somehow all of your problems disappear
There is ALWAYS someone out there that's worse off than you, someone that needs help and there is ALWAYS something to be grateful for
So set your intentions and take BIG, POSITIVE action
