Parker and I attempted our routine walk this morning, but got assaulted by daggers of freezing rain instead, so while we wait for this ice rain to turn into snow I’m heating things up with this #veganbrunch to soothe my soul and pump me up for our next winter walk. A little spicy, a little sweet, and WAFFLey good.
I can’t believe it’s not Chicken N waffles with spicy sriracha maple syrup
For the waffles
I just used @birchbenders and followed their instructions
For the I Can’t Believe It’s not Chicken
Cut one head of cauliflower into small florets, dip in flour of choice, then coat evenly in flax egg, then cover in crushed @beanfieldssnacks jalepeno chips
Airfry for 6-10 minutes, or until crispy
For the spicy maple syrup mix your favorite maple syrup with @yellowbirdsauce blue agave srirracha .

defrosted one of her pumpkin seed muffins for breakfast - grilled on the stove top with ghee (a little burnt but that’s the way i like it 😎) paired with a plain @lifewaykefir cup (mixed with cinnamon & vanilla extract) banana 🍌 and @justins almond butter!

once I realized it was Saturday, I did a sweaty HIIT workout before assembling these loaded toasts 🍠😎
satisfying all my cravings here - I almost always eat the savory first and save the sweet as a dessert for last!
I’m heading into work all afternoon, but I’m looking forward to a chill evening with my girl friend later on! ❤️

#breakfast wash and slice a sweet potato lengthwise and bake it at 375F for 42 min, flipping halfway. I topped mine with half an avocado + @manitobaharvest hemp hearts + @traderjoes EBTB seasoning + roasted chickpeas + a soft boiled egg + red pepper flakes, and the other has banana slices + @simplyorganicfoods cinnamon + @beekeepers_naturals bee pollen + @crazyrichardspb PB!
Today is the best leftover day with these braised coconut chickpeas over sweet potato ✨ I posted this on Stories a few days ago and had so many requests for the recipe, so here it is! It’s adapted from @thekitchn 🌿.
To make 👇🏼:
Cook 4 whole, medium size sweet potatoes as you prefer- I usually use the microwave but you could use the oven too! Meanwhile, sauté 1 medium onion, 4 cloves of minced garlic + 2 tbsp minced ginger on medium heat until translucent. Add 1 can of drained and rinsed chickpeas, 2 cans of coconut milk (or 1 can of coconut milk + 2 cups of cashew milk), 3 handfuls of chopped kale, 1/2 cup chopped sundried tomatoes, the juice of 1 lemon, 2 tsp ginger + 1/2 tsp salt. Bring mixture to a simmer, and cook for 10-15 minutes until flavors have developed and chickpeas are softened. Once done, pour over sweet potato + enjoy! 💛
