🎄At this point in my vegan career, I have tried many variations of chicken patties. And I think I've found a winner today. Read below to find out the brand👇🏼
🥑The grain blend is a mix of red heirloom rice, quinoa, and lentils, and it was boiled and simmered for about 20 minutes. The brand for these chicken patties was @morningstarfarms and they are by far my favorite due to their breading. The broccoli and corn were just heated in the microwave, and I plopped the tahini in the middle.

My kids and I pretty much devoured these crispy baked CHICKEN EMPANADA NACHOS today while they helped me write out and seal the Christmas cards. Then after that we had some hot chocolate and watched A Christmas Story on TV. It was a fun and memorable day. Making these yummy nachos and keeping my kids happy was easy thanks to @feelgoodfoods gluten free chicken empanadas. I prepared the empanadas as directed on the package and then topped with shredded cheddar cheese. Broiled in the toaster oven to melt the cheese then topped it all off with pico de gallo, black beans, creamy avocado, red onion, pickled jalapeños and fresh chopped cilantro. .

Plant Based Pasta 🍝 Made a super easy homemade cashew sauce that was soooo delicious 😍🙌🏻 It took me a bit to figure out how to get one that could be made in my blender because I don’t have a food processor 😅 And I feel like all sauce recipes call for a food processor 🧐 So this 5 ingredient pasta sauce is made in the blender with minimal ingredients 💯 Soaked cashews (have to soak them to get them blendable), almond milk, water, onion powder, and garlic powder 🙌🏻 and a pinch of pink Himalayan salt if you’re into that 😎 Sooo easy and so so good!! Kind of like a mix between a cheesy sauce and an Alfredo sauce 😋 -

#recipe details (also on my blog!): soak 1 1/2 cups of cashews in water for 2-3 hours. Then rinse with clean water and add to a blender. Add 1 cup + 2 tbsp water, 2 tbsp unsweetened almond milk + 2 tsp garlic powder + 1 tsp onion powder + sprinkle of pink Himalayan salt. Blend until smooth! Served with @eatbanza chickpea pasta, roasted broccoli, and sprinkled with @traderjoes everything seasoning 😎
Italian Chicken Parmesan Stuffed Zucchini Boats🌿🍅🇮🇹🌿Tag someone who would love these!
Made these bad boys for dinner last night and had to share because they taste seriously BOMB.com💥😍🤤 They are fast, fresh and filling. Took me less than 30 min to make! If you’re looking for an easy, healthy meal option, give these a try! I highly recommend and they are a great low carb option packed with protein, easy to make and they are sure to be a crowd pleaser😋❤️There's nothing better than enjoying a healthy and very easy to make meal!
🌿3 zucchini’s (cut in half, lengthwise and ends trimmed) 🌿 2 chicken breast (cut in cubes) 🌿 1/2C pasta sauce 🌿1 TBSP tomato paste 🌿grated Parmesan cheese 🌿shredded mozzarella 🌿1/4C Panko breadcrumbs 🌿Fresh minced garlic, avocado oil, salt, pepper, Italian seasonings 🌿Fresh basil
1️⃣Scoop out the center of the zucchini after you cut in half, lengthwise 2️⃣Sauté fresh garlic and avocado oil in large pan with chicken breast (cut in cubes) 3️⃣Add salt, pepper, Italian seasonings and cook for 5-7 min, stirring frequently 4️⃣Add pasta sauce and tomato paste and cook on low until mixture thickens, then add panko bread crumbs and grated Parmesan cheese, mix and cook another 3-5 min 5️⃣With a small spoon scoop mixture in each zucchini boat 6️⃣Bake in casserole dish on 350F for 15 min 7️⃣ Sprinkle shredded mozzarella cheese on each and broil for another 5 min or until cheese is melted 8️⃣Top with fresh basil and serve immediately.
